Lemon Pepper Baked Chicken

This one is simple and something I enjoy making a lot, especially because I have my own lemon tree in my backyard. It is super simple with only three ingredients. I usually get a few chicken breasts from the store and I like to filet them so they aren’t quite as thick. I have also done breast tenderloins before but have found that filleted breast tenders work the best. I also use a glass or ceramic baking dish to bake them. I like to serve my chicken with some roasted vegetables and rice for a perfectly balanced and delicious meal. Let me know what you think if you give this a try!


Ingredients:

  • Boneless, skinless chicken breasts (2-3 breasts filleted for a total of 4-6 pieces)

  • 2 lemons

  • Pepper


Directions:

  1. Preheat the oven to 425 degrees Fahrenheit.

  2. Pepper both sides of the chicken breasts and lay chicken breasts in a baking dish (I don’t usually put a nonstick coating/spray but you can if you want to).

  3. Squeeze juice from one whole lemon over the breasts (You can add extra pepper if you accidentally wash too much of it off with the lemon juice)

  4. Cut the other lemon into thin wheels and lay 1-2 wheels on each of the chicken breasts (this really helps the lemon soak into the breast). Bake for approximately 20 minutes (or until internal temperature reaches 165 degrees Fahrenheit).

  5. Let cool and enjoy!
